1) Organic acid salts : Citric acid, lactic acid and other organic acids are known to have actions to prevent food deterioration. It is used as acidulant for soft drinks, candies, jams etc.
As disinfectant of Chinese noodles, disodium hydrogenphosphate can be made into a soft elastic surface with unique elasticity. Sodium polyphosphate and sodium metaphosphate increase the water retention of flesh such as kamaboko, ham, sausage and so on to increase the binding force and extensibility.
3) Other inorganic salts
Potassium chloride is used as a reduced salt food as a substitute for salt. Calcium carbonate, calcium chloride, etc. are used as a coagulant, copper sulfate and zinc sulfate are used as a mineral strengthening agent for breastfeed substitute foods (powdered milk).
4) Vitamins • Amino acids
Ascorbic acid and sodium ascorbate are used not only for nutrition enhancement of various kinds of foods but also for oxidation prevention purposes. Other vitamins are used as nutrition enhancers for various foods.
